We’ve made several sandwich cookie recipes so far this year, but they’re just so much fun to make, we had to give this one a try.

My mom thought they’d be sort of like Nutter Butters, but these are much softer. At first I thought I liked them better without the filling, but then I changed my mind.

You would probably like them either way, though!

To make the dough, combine the butter, peanut butter, and sugars.

Add vanilla, and eggs, one at a time.

Combine the flour, baking soda, and salt; add to peanut butter mixture.  Roll the dough into 1-inch balls and place on cookie sheets.  Make a criss-cross shape with a fork (this was my favorite part.)

Bake in a 350 degree oven for 7-8 minutes, or until golden brown.

We decided it was better to bake these a bit on the longer side, because when they’re too soft, it’s hard to spread the filling.

To make the filling, beat together peanut butter, powdered sugar, vanilla, and milk.  We had to add a little extra powdered sugar to make our filling firm enough to spread.

Spread the filling on one cookie and top with another to make a sandwich.

Peanut Butter Sandwich Cookies

1 cup butter-flavored shortening (we used butter)
1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
3 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt

FILLING:
1/2 cup creamy peanut butter
3 cups confectioners’ sugar
1 teaspoon vanilla extract
5 to 6 tablespoons milk

Mix the peanut butter, shortening, and sugars in a mixing bowl. Add the vanilla. One at a time, add eggs and mix well.

Combine flour, baking soda and salt. Mix it in with the creamy mixture.

Roll dough into one inch balls and flatten with a fork. Bake for 7-8 minutes at 350 degrees.

Cool on a cooling rack.

Combine all the filling ingredients in a mixing bowl and mix until creamy. Spread on one cookie and top with another.  Repeat with remaining cookies and filling.

Makes about 4 dozen.

Looks good ! I love Nutter Butters. I wonder if a chocolate filling would also work…

Did you use natural peanut butter in the recipe or did you use the Kraft type peanut butter?

We used regular peanut butter, not natural.
