This week, we planned to make some cute animal cupcakes, but we didn’t have the right things to make the eyes for either cute animal!
(we need to buy some mini chocolate chips and some other things)
We looked and looked on the internet to find an idea we could do, but none of the ideas worked out for us.
Finally we tried making a ladybug cupcake, but it looked like a pink monster.
So, Sonia and Zoe and I decided to make one-eyed monster cupcakes, using candy eyeballs, marshmallows, and all the sprinkles/decorating things we could find!
We made names for all of the monsters and some of them are kings. The one with the most red hots is named Red Hot Fiery Inferno.
Even though we didn’t get to make the cupcakes we planned to make, we still had a lot of fun! Making cute cupcakes is more satisfactory at the end because they look good, but the process of decorating our monster cupcakes was hilarious and fun.
We used the chocolate cupcake batter we’ve shared with you before and we frosted our cupcakes with a half recipe of Buttercream Frosting.
Note from Kristen: We made mini cupcakes this time. Our cupcake recipes will make 24 mini cupcakes plus 4-5 regular cupcakes. Bake the small ones for about 12 minutes before testing them for doneness.
I used butter this time instead of oil just because I was out of oil, and I think I liked them better this way.
Oooh, and I should also tell you that the mini cupcakes are lovely to eat because the ratio of cupcake to frosting is different (more in favor of the frosting). I highly recommend it.

What a great idea for a kids’ birthday activity! Mini monster cupcakes for a monster party would work great for boys OR girls, and best of all – no cake for Mom to decorate.
Sometimes what you end up with is better than what you had planned eh? Loving these!
I’ve been a professional cake decorator of many years. I know how hard it is to get truely RED frosting. Make sure you use paste/gel food color not liquid. (http://www.thebakerskitchen.net/chefmaster-gel-food-color.aspx) Even then it takes a lot of coloring to get a nice looking red. You may have already discovered that frosting colors intensify after a while, so your pink monsters would be redder the next day.
Cute…I love them…keep up the good work.
