We thought that since it’s so hot outside, we’d try some recipes that don’t have to be baked!

These are basically just Rice Krispy treats on a stick, dipped in chocolate, which makes them a little bit fancier.

I think these are better than regular Rice Krispy treats because of the candy coating, and they were really fun and simple to make.  My favorite part was coating them in chocolate!

To make these, first melt 3 tablespoons of butter in a saucepan.  Add 4 cups (10 oz.) of marshmallows.  The mini ones will melt more easily.

Pour 6 cups of Rice Krispies into a large bowl. Once the marshmallows are melted, pour them over the cereal.

Mix.

And mix.

My mom helped me finish the mixing.

Next, you’ll need to wet your hands and shape the cereal mixture into spheres (or you could spray your hands with nonstick coating.)

We found this works best if you push the cereal together pretty firmly.

Once you have a ball made, push a popsicle stick into the middle.

Repeat with the rest of the cereal mixture.

Now you’ll want to coat them in chocolate.  We melted white chocolate candy coating and regular chocolate candy coating.  Our coating was a little bit too thick, though, so it was hard to dip our pops neatly.

Also, we had some trouble with the sticks coming out, even though my mom froze the pops for a few minutes before we dipped them.

So, this was harder than it sounded like it would be!

After you dip your pops, sprinkle them with whatever sprinkles you like.  We used patriotic-colored sprinkles since it was July 4th.

And we put ours in the freezer right after we made them so that the chocolate would harden fast.

We all liked the regular chocolate ones the best, but the white ones do look nice.

6 cups crisp rice cereal
3 tablespoons butter
4 cups (10 ounces) marshmallows
Popsicle sticks
9 ounces white candy coating
9 ounces chocolate candy coating

First, pour the cereal into a large bowl.

Then melt the butter in a saucepan over low heat. Add the marshmallows; cook and stir until soft and smooth.

Pour the melted marshmallows over the cereal, and mix to combine.

With wet or greased hands, shape into balls and put a popsicle stick in each one.

Melt the candy coating according to package directions.  Coat each pop with chocolate candy coating and sprinkle with colored sugar or sprinkles.

Makes about 2 dozen.

Lisey, your pops are so cute!
You can add a little vegetable oil to the chocolate to thin it down, be careful a little goes a long way.

these look so yummy and fun to make. i know i would like the regular chocolate better, too. even dark chocolate! yum.

The recipe only makes 2 dozen full size pops when I’m not involved in the process. Somehow a significant portion of rice crispy treat “batter” disappears whenever it’s in my vicinity.

If you don’t have chocolate coating, you can melt in 1-2 T. parafin wax to about 8 oz chocolate. Or use melted chocolate chips – they’re not as stable and glossy as coverture but they are, by design, more stable than chocolate.

100 lolly sticks have just arrived in the post and we have some leftover marshmallows from camping…hmmm now if I could just find a super-cute recipe to make with the kids I’d be sorted! ;-)
