We originally planned to make a different kind of animal cupcake, but accidentally baked regular-sized cupcakes instead of the mini-sized ones the recipe called for.
Whoops.
So, we looked through my cookbook and found bunny cupcakes. We didn’t have all of the decorations the book listed, but we made do with what we had in the house!
I think they turned out cuter than the ones in the cookbook and it was fun to make them. I especially liked piping the frosting on the ears and making different facial expressions with the chocolate sprinkles.
Want to make some cute bunnies for yourself?
First, you’ll need 12 cupcakes. We used our chocolate cupcake recipe.
You’ll also need half a recipe of buttercream frosting. It’s the perfect amount for 12 cupcakes. Leave most of it white, but set aside a few tablespoons and tint that frosting pink for the ears.
Once the cupcakes are cooled, frost them all with white frosting and then sprinkle them with white decorating sugar.
For the ears: Cut a large marshmallow in half with a scissors. Press gently to form an oval shape. Attach to cupcake using half a toothpick for each ear. Pipe a thin line of pink icing down the middle of each ear.
For the eyes: Place two chocolate chips on the cupcake, pointed side down.
For the nose: Use an M&M (we used Easter pretzel M&M’s.)
For the cheeks: Press gently on two mini marshmallows to flatten a little, then place beside the nose.
For the eyebrows/mouth: Carefully place chocolate sprinkles on cupcake as desired. As you can see, we came up with several different combinations.
