Cinnamon Sugar Muffins

One day, we didn't have any bread for lunch, so I looked for a muffin recipe to make. I was in the mood for cinnamon streusel and I found this recipe while googling. A lovely thing about these muffins is that they have cinnamon IN them as well as on top of them.  And they have a soft, cakey texture which, in my opinion, is a mark of a good muffin. Chocolate-Dipped Coconut Macaroons

A while back my mom and I were discussing what gluten-free treats could be brought to a gathering and my mom remembered that macaroons are naturally gluten-free. Homemade Graham Crackers, Part 1!

After we made wheat thins, we decided we'd like to try some other crackers.  We found this recipe on the internet (at Kitchen Simplicity), and we're also planning to try one from America's Test Kitchen, just to compare the two. These were a lot easier to make than the wheat thins because we didn't roll the dough so thin.  Also, this recipe had us roll the dough out right on the baking sheet, which is so much easier than trying to transfer rolled dough to the baking sheet.
